Dinner at Home (ft. Costco)

Although I’m not a big fan of Valentine’s Day, I’ll always jump at the opportunity to cook dinner at home with Chris, drink some champagne, and watch New Girl and This Is Us on the couch with the cats. I’ve said this before, but I don’t think there’s a need to have a specific day to celebrate those you love – it should be an every moment, every day kind of thing. However, it’s a nice reminder to not take our loved ones for granted and love on them a little extra on this day.

I told Chris all I wanted to do was have my (our) favorite things to eat and hang out at home with no technology (which kinda got ruined because I wanted to write this blog post, but close enough). And since we are Costco fanatics, I would say this entire meal was provided by Costco/a cute little market in Detroit where Chris sometimes stops on his way home from work.

While listening to the most recent Lumineers record fresh off of Amazon, we started out with some fresh guacamole, salsa, and chips and also definitely some slices of cheese I snuck while shredding it up for our actual meal (featuring a cocktail with Tito’s vodka, fresh-squeezed grapefruit juice, ginger syrup, and lemon – I am spoiled).

Then Chris marinated/baked/grilled us up some delicious wings – lately we have been buying the jumbo bag of frozen wings from Costco. I would go as far to say we are wing-obsessed, and making them at home is way cheaper (and healthier) than getting them at a restaurant. We did two different kinds (spicy barbecue and buffalo) dipped in homemade ranch dressing. Doesn’t look pretty, but they are SO good. I love food charred on the grill, and Chris does this perfectly with wings.

THEN, we finally had our main meal. For Chris’s gift today, I got him these cute little cast-iron skillets that he has been obsessed with at brunch places lately. It was all his idea to sauté some spinach and red peppers and mix them with noodles, marinara sauce, and fresh mozzarella and bake them in the oven. Broiled and topped off at the end with some more cheese. They turned out AMAZING. We were both big fans.

And obviously served them with some Costco champagne on the side.

After we were insanely stuffed, we watched our shows and eventually dug into dessert – chocolate covered strawberries and tiramisu from a cute bakery around the corner, along with more champagne.

I also got a gift that I’ve been wanting for a while now – a diffuser and some lovely Doterra Breathe oil. I can’t wait to use it – especially since I’ve had a really annoying cold this week.

My heart is so full lately, thanks to my wonderful, wonderful boyfriend, my sweet family, my amazing friends, and just the overall love I feel every single day. A big goal I have for this month of February is to show that same love to everyone I interact with and to do everything I can to practice overbearing grace in every situation I am placed in.
